Tropical Lime Cookie RecipeThis is a wonderful, exotic and buttery tropical lime cookie recipe. We made these lime cookies for our pirate/scavenger hunt. They are delicately flavored with fresh lime juice and a hint of coconut. They are very moist and melt easily in your mouth. These tropical cookies were a hit. I used fresh lime juice and do not know if bottled lime juice would give you the same delicate lime flavor but I guess it would not hurt to try. Tropical Lime Cookies: MethodIn a medium size bowl, cream the white sugar, the brown sugar and the shortening. Add the vanilla and the eggs one at a time. Combine until light and fluffy. Add the lime juice and the zest. In another bowl, sift together the flour, salt, baking powder and baking soda. Blend the flour mixture and the sugar mixture until well combined. Add the shredded coconut. Form into balls and place on a greased cookie sheet. Bake at 375 degrees F. for 5 to 7 minutes but no more. You do not want to over bake them!
