Orange Strawberry Scone Recipe

This is a delicious orange strawberry scone recipe. Fresh strawberries and a hint of orange make these scones a joy to eat as well as a delight for the eyes. A delicate orange icing gives this strawberry scones the right amount of sweetness.

You may find that adding fresh fruit to your scone batter is a tad tricky. If you have some tips feel free to share. I had the strawberries very gently trying not to crush them. Sometimes it is easier to cut the scones and then press the strawberries in.

Remember that if you add your strawberries into the dough, your dough will be sticky. A well floured surface will help greatly to spread the dough and cut it.

If you have any tips or comments, you may leave them here. Your recipes and reviews are welcome as well.

Strawberry Scone Recipe

Strawberry Orange Scone Ingredients

  • 2 1/4 cups all-purpose flour

  • 1/3 cup sugar

  • 1 tablespoon baking powder

  • 1/4 teaspoon salt

  • 1 large egg

  • 8 tablespoons UNsalted butter - cold

  • 1 cup heavy cream

  • 1 cup fresh strawberries

  • 1 teaspoon grated orange zest

  • Orange glaze - recipe below

Strawberry Orange Scones: Method

In a bowl, mix the flour, salt, baking powder and sugar. Add the butter cut into little chunks. To mix the butter and flour you have two options:

1) Mix with the tip of your finger until the flour/butter mixture resembles fine sand.

2) Use a pastry blender and blend until the flour/butter mixture resembles fine sand.

Make a well in the center of your butter/flour mixture, add the egg, the zest and the cream. Blend with a fork until a soft dough forms. When the fork no longer works, add the strawberries and use floured hands to form the dough into a nice, soft and pliable dough. Be gentle or your strawberries will be mush!

Turn your dough onto a lightly floured surface. Roll out with a rolling pin until it is 1/2 to 3/4 inch in thickness. Here again you have various options:

1) When you are rolling out your dough, shape it into a circle about 8 inches wide. Then cut the circle into 8 slices - this is the method I used.

2) Use a biscuit cutter to make circles - about 2 inches wide.
