Refreshing Strawberry Sandwiches





These are great summer strawberry sandwiches...cool, tasty and refreshing.

The good part about strawberries is that they not only test good but they are also good for you! Strawberries are high in vitamin C. As a matter of fact, 1 cup of fresh strawberries contains 88 milligrams of vitamin C. The Recommended Daily Allowance - RDA - for adults is 45 milligrams, so one cup of fresh - raw - strawberries almost gives you double the RDA.

Strawberries are also low in calories. One cup of the tasty - unsweetened - fruit is only 55 calories and no fat.

How do you buy the best strawberries for your dollar?

As you already know, strawberries come in all shapes and sizes. With strawberries big is not always better. Smaller varieties have often more flavor and they may be better suited for these strawberry tea sandwiches. Obviously, when picking strawberries: dry, firm and fully ripe is best. The stems should be green and fresh looking. If the container is stained, you might want to pass as this could mean that your strawberries are overripe.

Ingredients for Strawberry Tea Sandwiches


  • 8 oz cream cheese - softened

  • 1 teaspoon orange zest

  • 2 tablespoons strawberry jam

  • About one cup fresh strawberries - washed, stemmed and sliced

  • Bread of your choice - edges cut off






Method for Strawberry Tea Sandwiches

In a medium size bowl, mix the cream cheese, the orange zest and the jam. Set aside - covered - for about 20 minutes.




Strawberry Sandwiches



When you are ready to assemble your tea sandwiches, spread some of the cream cheese mixture on two slices of bread. On one slice, place some strawberries on top of the cream cheese and cover with the other piece of bread.

Cut your strawberry tea sandwiches into quarters and place on a pretty platter.
