Strawberry Quick Bread





I received this strawberry quick bread recipe in the mail. Yes, in the mail. You see, this year - 2012 - a friend of mine is sending me one foodie gift a month in the mail. And this was my food gift for February. I loved her idea so much I have copied it and every month I give a new gift to some special friends - as well as to my kids and husband. My gifts are not always food gifts... This is really such a GREAT idea...and everyone loves getting a small gift and it feels great to think and do something for others. So this is a win-win project.

I made some minor changes to my friend's recipe: such as decreasing the fat, adding a glaze, etc. I quickly decided that this strawberry bread would be perfect for a tea party...especially a strawberry tea party!

This recipe makes two strawberry tea bread loaves. One could be frozen - unglazed - for later use - up to 3 months. You may omit the glaze if you'd rather.

You may use fresh strawberries or even dried strawberries - which will need to be rehydrated beforehand. Frozen strawberries may be used as well BUT they contain more liquid - this affects the end results - and they are also rather "mushy" when defrosted.

Strawberry Quick Bread





Ingredients for Strawberry Bread

  • 2 cup strawberries

  • 3 cups flour

  • 2 cups sugar

  • 1 teaspoon ground cinnamon

  • 1 tablespoon vanilla extract

  • 1/4 teaspoon ground nutmeg

  • 1 teaspoon salt

  • 1 teaspoon baking soda

  • 1/4 cup oil

  • 1 cup milk

  • 4 eggs

Glaze:

  • 1/2 cup milk

  • 2 cups powdered sugar

  • 1/4 teaspoon orange extract

Method for Strawberry Tea Bread

Slice the strawberries. Set aside.

In a large bowl, combine the flour, sugar, cinnamon, nutmeg, salt, and baking soda. Make a well in the center, add the eggs, milk, oil and vanilla extract. Mix until well combined.

Pour into two greased bread pans. Bake at 350 degrees for 45 minutes to one hour or until a toothpick inserted in the center comes out clean.

In a medium size bowl, mix the powdered sugar, the 1/2 cup of milk and the orange extract. Poke some holes into each loaf with a skewer - or a knife - and divide the glaze over each warm loaf. Let the glaze soak in. After about 15 minutes, unmold the breads.

Makes two strawberry quick bread loaves.
