Recipe for Pumpkin Cookies








This is a very nice recipe for pumpkin cookies. These chocolate chip pumpkin cookies are soft and more cakelike in texture than a regular cookie. They still taste delicious though.

If you like pumpkin and chocolate, you will love these cookies. There are easy to make and are a great treat during the fall and holiday season. Yum!

Recipe for Pumpkin Cookies





Soft Pumpkin Cookies: Ingredients


  • 1 can of pumpkin puree - 15 oz

  • 1 cup of white sugar

  • 1/3 cup of vegetable oil - I use olive

  • 1 egg

  • 2 cups of all-purpose flour

  • 2 teaspoons of baking powder

  • 1 teaspoon of baking soda

  • 1 teaspoon of ground cinnamon

  • 1/2 teaspoon of ground nutmeg

  • 1/4 teaspoon of ground clove

  • 1/4 teaspoon of salt

  • 2 teaspoons of vanilla extract

  • 1 teaspoon of rum extract

  • 2 cups of semi-sweet chocolate chips






Chocolate Chip Pumpkin Cookies: Method

Combine the pumpkin puree, sugar, oil, and egg. Blend well. Set aside.

In another bowl, mix together the flour, baking powder, baking soda, ground cinnamon, ground nutmeg, ground clove, and the salt. Add the flour mixture to the pumpkin mixture.

Add the vanilla and rum extracts.

Drop by spoonful on a greased cookie sheet and bake at 350 degrees for 10 to 12 minutes or until slightly brown and firm.
