Recipe for Mexican Bride Cookies Pastelitos de Boda
Mexican bride cookies - also known as pastelitos de boda - are a sort of Mexican shortbread cookies. They
are very easy to make and they are melt in your mouth delicious.
Technically, pastelitos de boda means little wedding cakes. As I made this recipe I realized these cookies are just similar to what we
call snowball cookies and serve
around Christmas time. No matter, this is another great cookie recipe to add to your
"arsenal."

Mexican Shortbread Cookies: Ingredients
- 1 cup of butter - softened
- 2 cups of all-purpose flour
- 1 cup of walnuts - chopped very fine - I use the Pampered Chef chopper, works like a charm!
- Powdered sugar - optional
Mexican Bride Cookies: Method
In a stand mixer - or with a hand mixer - cream the butter and sugar together until creamy and almost white
in color.
Add the vanilla and the cream and combine well.
Sift
the flour and the salt together and add to the butter mixture. Mix until well blended. Add the walnuts
and combine thoroughly.
Roll the dough into a log about 2 inches in diameter and refrigerate for a couple of hours. An alternative is to put
the dough in the freezer for about 45 minutes.
Remove from the fridge and slice. Place the cookies onto an UNgreased cookie sheet.
Bake at 375 degrees for 12 to 15 minutes. Cool for about five minutes before removing to a plate or a cookie
rack.
Sprinkle with powdered sugar if you choose to.
Makes 3 dozen cookies.

would a sugar cookie dough, cut it with
cookies cutters and decorate! (See example below).
