Simple Lemon Scones Recipe





This lemon scones recipe should really hit the spot if you like the tanginess of lemon.

Scones are British biscuit-like cakes. They can be made using any flavors and are usually served with either morning or afternoon tea.

Scones should be buttery, flaky and light. They will melt in your mouth and are best eaten warm.

Lemon Scones Recipe





Lemon Scones: Ingredients


  • 2 cups all-purpose flour

  • 1/2 cup sugar

  • 1 tablespoon baking powder

  • 4 tablespoons UNsalted butter - cold

  • 1 cup heavy cream

  • 1/2 teaspoon lemon flavoring

  • 1 egg, beaten

  • 1 teaspoon lemon juice

  • 1 lemon zest






Lemon Scones Recipe: Method

Sift together the flour, baking powder, salt, and sugar. Cut the butter into tiny pieces and add to the flour.

Now you have two choices:

1) Mix the flour and the butter with the tip of your fingers until the flour/butter mixture is like fine sand.

2) Use a pastry blender and mix with the blender until the butter is well blended with the flour mixture.

Make a well in the center of your flour mixture and add the egg, the cream, the vanilla extract and lemon flavoring. Mix with a fork until it becomes too difficult. Then use your floured hands.

When you have a soft dough, turn onto a floured surface. Roll with a rolling pin, until you have a circle about 3/4 inch in thickness and about 6 inches in circumference. Cut into eighths with a knife as you would the pie pieces.

Place each piece onto a greased cookie sheet. Place them at least 1/2 inch apart.

Bake at 400 degree F, for 15 minutes and until golden brown.

You may eat then plain or with a lemon glaze (see below.) Lemon scones are also delicious with lemon curd, Devonshire cream - also called clotted cream - or plain butter.






Glazed Lemon Scones


  • 1 cup powdered sugar

  • 1 tablespoon lemon juice

  • 1/2 teaspoon lemon flavoring

  • 2 tablespoons heavy cream

Mix all the ingredients together until you have a smooth glaze. Pour on top of the warm lemon scones.
