Italian Scones - Comments and reviews.

Italian Scones

Pizza Scones: Ingredients

  • 2 cups all-purpose flour

  • 1/2 cup cornmeal

  • 1 teaspoon dried basil

  • 1/2 teaspoon dried oregano

  • 1/2 teaspoon garlic powder

  • 1/4 teaspoon dried thyme

  • 1/4 teaspoon salt

  • 1 stick cold butter cut into little chunks - 1/2 cup

  • 1/2 cup sundried tomatoes packed in oil and cut into small pieces

  • 1/2 cup shredded mozzarella cheese

  • 1/2 cup grated parmesan cheese

  • 2 large eggs - beaten

  • 3/4 cup buttermilk

  • Optional: 1/3 cup cut up pepperoni or cooked Italian sausage

Italian Pizza Scones: Method

In a medium size bowl, place the flour, cornmeal and the baking powder. Add the pieces of butter. I like to use my fingers for this step but a pastry blender will work as well. Between your fingers rub the flour mixture and the butter together until it resembles coarse sand.

Add the spices and the salt and combine well. Add the beaten eggs and the buttermilk. Mix well with a fork until the mixture forms a sticky dough. Add the sundried tomato pieces, the cheese - and the pepperoni or sausage if you choose. Mix together.

Turn the dough onto a lightly floured surface. Gently knead the dough until it holds together. Divide the dough in half and roll each half into a circle about 1 inch thick.

Italian Scones

Cut the circle into eight wedges. Repeat this process with the second half of the dough.

Italian Scones

Place each wedge unto a greased cookie sheet about 1 inch apart.

Italian Scones

Bake at 375 degrees for 10 to 15 minutes or until golden brown. Serve while warm.

Makes 16 Italian scones.
