How to Make a Coffee Cake: MethodIn a medium size bowl, whisk together the flour, cornstarch, baking powder, baking soda and the salt. Set aside. In a large bowl, cream the sugar and the butter until light in texture and lighter in color. Add the vanilla and rum extracts. Combine well. Add the eggs one at a time and beat well after each addition. Add 1/3 of the milk and combine well, then add 1/3 of the flour mixture and combine well. Repeat this process until the milk and flour are used and all combined into a smooth dough. ![]() Pour the batter into a greased baking dish. To make the topping, in a medium size bowl place all the ingredients and blend with a pastry blender (see picture).
