Honey Buttermilk Scones

Honey Buttermilk Scones: Ingredients

  • 2 1/2 cups all-purpose flour

  • 3 teaspoons baking powder

  • 1 teaspoon baking soda

  • 1/4 teaspoon salt

  • 1 stick unsalted cold butter - cut into tiny pieces

  • 1 cup buttermilk

  • 1/3 cup honey

  • Powdered sugar - or regular sugar

Buttermilk Honey Scones: Ingredients

In a large bowl, mix the flour, baking soda, baking powder, and salt together with a whisk. Cut in the butter and mix well with either the tip or your fingers or a pastry blender. At this point your flour/butter mixture should resemble coarse sand.

Make a well in the center of your flour mixture. Add the honey and the buttermilk. Blend with a fork or a wooden spoon.

The dough will be sticky...when the fork - or spoon - is no longer effective, turn your dough onto a floured surface. Dip your hands in flour as well so that the dough does not stick to your hands. Knead a few times - 3 to 5.

Roll out your dough with a rolling pin. Cut circles into the dough with a biscuit cutter. Take the scraps of dough, roll out again and cut. Repeat this process until all the dough is cut. Place on a greased cookie sheet.

Bake at 375 degree F for 16 to 18 minutes. Sprinkle some powdered sugar over your buttermilk scones. Serve them while still warm.

Makes about a dozen scones.
