Greek Easter Cookie Recipe Koulourakia
This is a Greek Easter cookie recipe. These cookies are also called "koulourakia."
For the people of Greece, Easter is the most important holiday. It is known as "Pascha." This word is derived from the Jewish word "Pasah"
which means "Passover." In Greece, Easter is not about the Easter bunny but rather it is about the resurrection of Christ.
In all honesty, the Easter holiday is also mixed with non religious traditions. No matter the traditions, it is a holiday
celebrated amongst family and
friends. It is festive time celebrated with bonfires, religious ceremonies and of course....food!
You will find that these cookies are really delicious dipped in some hot tea and for breakfast since they are not very sweet.

Greek Easter Cookie Recipe: Ingredients
- 1/2 cup of butter - softened
- 1 teaspoon of baking powder
Koulourakia: Method
In a bowl - or even better, a stand mixer - cream the butter and the sugar. Add the eggs, one at a time. Add the milk and the vanilla extract.
In another bowl, blend the flour and the baking powder.
Slowly add the dry ingredients to the wet ingredients. Blend well.
Take a small amount of the dough and roll it between your palms until you have a nice rope about 15 inches long. Then you have
two choices:
1) Make both ends of your rope meet and press them together. Then twist the rope until it coils.
2) Roll the top of your rope to the right until half way down, then the bottom half to the left (see picture below).
Place on a greased cookie sheet. Brush the top of the cookies with the beaten egg and sprinkle with almond pieces.
Bake at 350 degrees F. for 15 to 18 minutes.
