Gluten Free Cherry SconesThis recipe is for gluten free cherry scones. If you must eat a gluten free diet - or have a loved one that does, you still should be able to enjoy a tea party with some minor dietary accommodations. For those who are unsure, what is gluten exactly? Gluten is a protein that is found in certain grains such as oats, rye, wheat and barley. It is therefore most commonly found in baked goods - scones, cookies, cakes - and breads. Some people - you might be one of them - have an allergy to this protein. This causes intestinal discomforts which can range from minor to major. Some grains do not contain gluten: rice, corn, buckwheat, millet, amaranth, quinoa and teff. Lemon Cherry Gluten Free Scones: MethodIn a large bowl, whisk together the gluten free flour mix, sugar, baking powder and salt. Add the butter pieces and blend into your flour mixture with a pastry blender, two knives or the tips of your fingers. Your mixture should look like coarse crumbs. Make a well and add the heavy cream, beaten egg and lemon extract. Stir just until combined. Add the cherries, do not over mix. The dough will be sticky. ![]() Preheat oven to 375 degrees F and line a cookie sheet with parchment paper. ![]() ![]() Drop by the - large - spoonful onto the cookie sheet. Bake for about 15 to 20 minutes or until a toothpick inserted into the center of your gluten free cherry scone comes out clean. Remove from oven and transfer to a wire rack to cool.
