Gluten Free Cherry Scones





This recipe is for gluten free cherry scones.

If you must eat a gluten free diet - or have a loved one that does, you still should be able to enjoy a tea party with some minor dietary accommodations.

For those who are unsure, what is gluten exactly?

Gluten is a protein that is found in certain grains such as oats, rye, wheat and barley. It is therefore most commonly found in baked goods - scones, cookies, cakes - and breads. Some people - you might be one of them - have an allergy to this protein. This causes intestinal discomforts which can range from minor to major.

Some grains do not contain gluten: rice, corn, buckwheat, millet, amaranth, quinoa and teff.

Gluten Free Cherry Scones





Lemon Cherry Gluten Free Scones: Ingredients


  • 1/4 cup white sugar

  • 2 teaspoons baking powder

  • 1/4 teaspoon salt

  • 1/3 cup cold, unsalted butter - cut into pieces

  • 1 large egg - lightly beaten

  • 1/2 to 1 teaspoon f lemon extract

  • 1/2 cup heavy cream

  • 1 cup cherries - cut into pieces

  • Powdered sugar






Lemon Cherry Gluten Free Scones: Method

In a large bowl, whisk together the gluten free flour mix, sugar, baking powder and salt. Add the butter pieces and blend into your flour mixture with a pastry blender, two knives or the tips of your fingers. Your mixture should look like coarse crumbs.

Make a well and add the heavy cream, beaten egg and lemon extract. Stir just until combined. Add the cherries, do not over mix. The dough will be sticky.

Preheat oven to 375 degrees F and line a cookie sheet with parchment paper.

Drop by the - large - spoonful onto the cookie sheet. Bake for about 15 to 20 minutes or until a toothpick inserted into the center of your gluten free cherry scone comes out clean. Remove from oven and transfer to a wire rack to cool. When they have cooled, sprinkle with powdered sugar.

Makes about 10 to 12 scones.
