Recipe for Eggnog Scones

These eggnog scones are perfect for the Christmas season: flaky, buttery, not too sweet and with a hint of eggnog flavor. Yum! They would make the perfect addition to any Christmas tea menu.

The eggnog flavor seemed more pronounced while these scones were still warm.

If you are planning a Christmas tea party then you might consider placing these scones on the menu alongside candy cane scones and apple pie scones.

This recipe does not require much eggnog...only 1 cup and 3 tablespoons. You could also make them out of season, simply replace the eggnog with heavy cream. Obviously, the eggnog flavor will not be as pronounced but you will still enjoy the other spices.

Christmas Scones: Ingredients

  • 1 cup eggnog

  • 1 egg, slightly beaten

  • 2 1/3 cups unbleached all-purpose flour

  • 2 teaspoons baking powder

  • 1/2 teaspoon baking soda

  • 1/2 cup white sugar

  • 1/4 teaspoon salt

  • 1/2 cup unsalted butter

Eggnog Christmas Scones: Method

Combine eggnog, rum extract and the egg together and mix.

In a bowl - a stand mixer works well for this - combine the flour, baking powder, baking soda, salt, sugar, spices and mix to blend. Add the butter and combine well. If you are not using a stand mixer, use a pastry blender. When the butter is well incorporated, add the eggnog/egg/rum mixture. Combine until you have a nice soft dough. It should not be overly sticky. If it is add some flour 1 tablespoon at a time.

For the next step, I use my hands. You will need some parchment paper. Sprinkle some flour on top. With your hand shape the dough into a rectangle and flatten it to 3/4 of an inch. Then with a knife make some square and then cut the squares into triangles. Place each triangle unto a greased cookie sheet.

Bake at 400 degrees for about 15 minutes - or when the edges are brown. Glaze while still warm but not hot.

This scone recipe makes about a dozen.

Glaze for Christmas Scones

  • 1 cup powdered sugar

  • 3 tablespoons eggnog

  • Optional: pecan pieces

Mix all the ingredients - minus the pecans - until you have a thick glaze. Pour onto each eggnog scone and decorate with some pecan pieces if you wish.
