Mexican Cheese Dip Recipe: Ingredients
- 1 tablespoon of olive oil
- 1/2 cup of chopped onion - I use the Pampered Chef chopper for this process
- 3 cloves of garlic - minced - again the Pampered Chef chopper (I really love that thing)
- 1 medium tomato - chopped - optional
- 1 - 4 oz - can of diced green chilies
- 1/2 cup of heavy cream - you can also use milk
- 3 cups of grated cheddar cheese
Easy Mexican Dip Recipe: Method
In a medium size pan, saute the onion and the garlic in the olive oil.
Add the chilies, the taco seasoning, the cornstarch and the cream. Bring to a boil. Add the cheese
a little at a time and wait until it has melted before each new addition.
Add salt and pepper to taste and the tomato if you choose. It is ready to serve.
For a party, you can keep warm in a mini crock pot.
