Easy Key Lime Pie Recipe Tequila Key Lime Pie
This is a very easy key lime pie recipe. It is also light and delicious.
This key lime pie can be made with tequila***. I chose not to. Tequila can be expensive and for
just a quarter cup it seems like an added expense I did not need. I will therefore include - for you - the variation for making this
tequila key lime pie without the tequila.
***Tequila is a Mexican alcohol made from the juice of the agave plant.
The crust for this pie contains pignolas - pine nuts - also called pinion or pynion. Pine nuts are the edible seed of the fruit - pine cone -
of trees of the pine family. They have a very delicate flavor. You may replace the pine nuts with walnuts if you so choose. You will
obtain a different flavor but rest assured that your key lime pie will still be delicious.

Tequila Key Lime Pie: Ingredients
- 1/2 cup of pine nuts - chopped very finely Pampered Chef chopper, works great)
- 4 vanilla wafers - crumbled
- 1 stick of unsalted butter - melted - 1/2 cup
- 1 can of sweetened condensed milk
- 1/2 cup of fresh lime juice
- 1/4 cup of tequila or 1 tablespoon of agave syrup, 3 tablespoons of water and 1 1/2 teaspoons of white vinegar
Easy Key Lime Pie: Method
For the crust:
Mix the vanilla wafers crumbs and the chopped pine nuts. Pour the melted butter on top and press your crust into
a pie plate.
Set aside.
For the filling:
In a medium size bowl and with a hand held mixer
- or a stand mixer
- beat the egg whites until
they start forming soft peaks. Add the sugar and blend well. Set aside.
In another bowl, mix the sweetened condensed milk with the lime juice and the tequila - or tequila substitute.
Gently fold this mixture into the egg whites.
Pour the filling into the crust. Bake at 350 degrees for 20 to 25 minutes. Sprinkle the crumbled vanilla wafers on top of your tequila key lime pie.
Cool completely before eating.
Garnish with whipped cream and a lime slice if you choose.
