Recipe for Easy Chocolate Cookies





This recipe for easy chocolate cookies could have easily been called ultimate double chocolate cookies. In these chocolate cookies, cocoa powder and bittersweet chocolate bits come together to make a wonderful chocolate lover cookie that is chewy and reminds me a tad of gooey brownies...especially right out of the oven when they are still very soft and warm.

Are you chocolate lover? So just for giggles, let's see if you can answer some of these questions:

  • Where does the name chocolate come from?

Answer: It comes from the Aztec word "xocolatl" which means "bitter water."

  • Does chocolate contain caffeine?

Answer: Yes it does. However, the amount of caffeine in chocolate is very small in comparison to coffee which contains 100 to 150 milligrams per cup.

  • 5 to 10 milligrams in 1 oz of bittersweet chocolate

  • 5 milligrams in 1 oz of milk chocolate

  • 10 milligrams in a 6 oz cup of hot cocoa

  • Which kind of chocolate do Americans prefer?

Answer: The overwhelming majority - 71% - of Americans prefer milk chocolate.

Ingredients for Chocolate Cookies


  • 1 1/4 cups all-purpose flour

  • 1/4 cup Dutch processed cocoa

  • 1/2 teaspoon baking soda

  • 1 stick butter - softened

  • 2/3 cup light brown sugar

  • 1/3 cup white sugar

  • 1/4 teaspoon salt

  • 1 egg

  • 1 teaspoon vanilla extract

  • 3 ounces bittersweet chocolate - you may replace this with semi-sweet mini chocolate chips.

Cut the bittersweet chocolate into small chunks.

In a medium size bowl, blend with a whisk the flour, cocoa powder, salt and baking soda. Set aside. Make sure they are no lumps.

Cream the butter, brown sugar and white sugar. Add the egg and combine well. Add the flour and the chocolate bits and mix until the ingredients are well combined BUT do not over mix.

Drop by spoonful onto a greased - or parchment paper lined - cookie sheet. Bake at 325 degrees for 10 to 12 minutes.

Make 2 dozen.
