upper class afternoon tea snack. The lower classes
could
ill afford a snack with little substance.
A modern cucumber sandwich recipe has more nutrition and you also find it has more flavor than the blander traditional
cucumber tea sandwich.

Traditional Cucumber Tea Sandwich
- A loaf of thin sliced white bread
Wash the cucumber then peel - or score - it lengthwise. Cut it into thin slices.
Place the cucumber slices between some paper towels in order to soak up some of the moisture.
Pepper and salt the slices to taste.
When you are ready to eat, put a thin layer of butter on each slice of bread - this will help the bread not to get soggy. Then place some
cucumber slices on the bread slices. Cut off the crust and cut diagonally twice. You will have 4 triangles.
Modern Cucumber Sandwich Recipe:
Cucumber and Cream Cheese Sandwiches
- 1/2 cup vinegar - I use apple cider
- 8 ounces cream cheese - softened
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/4 teaspoon dill - optional
- A loaf of white - or sourdough - bread
Wash the cucumber then peel - or score - it lengthwise. Cut it into thin slices.
Mix the water and the vinegar in a bowl and let
the cucumber slices soak for a half hour.
Drain them. Salt them to taste.
Note: I drain mine in a colander. Then I place them in between some clean kitchen towels to absorb more
moisture.
One half hour before you are ready to serve them, mix the cream cheese, the mayonnaise and the spices.
Put a thin layer of the cream cheese mixture on both slices of bread.
Note: I place a thin coat on one slice and a thicker one on the other. The cream cheese mixture acts as
a barrier and helps the sandwiches to not get soggy.
Then place some
cucumber slices on the bread slices. Cut off the crust and cut diagonally twice - or once. You will have 4 triangles - or two if you
only made one cut.
Note: Do not make them too long in advance as they do not keep well - they can get soggy!
