Cream Cheese Cranberry Tea Sandwiches

These is cream cheese cranberry tea sandwiches have a hint of orange flavor. They are perfect for any fall or winter tea party.

Cranberries are full of goodness and they are very healthy for you. I used dried orange flavored cranberries that I was able to purchase at Trader Joe's. Plain dried cranberries will work just as well. The dried cranberries need to be chopped very fine for the best results.

If you wanted a low fat version for these cranberry sandwiches, you could easily replace the cream cheese with some yogurt cheese. The end result would be a tad more tart however.

Making yogurt cheese is very simple. You will need some cheese cloth - I use the Donvier Yogurt Cheese Maker it makes life much easier and I also use this device to make Greek yogurt. If you use cheesecloth, you will need to pour your yogurt into multiple layers of cheesecloth, tie it and leave it hanging over a container for at least 24 hours - in the fridge. If you are using the Donvier cheese maker, pour the yogurt in the strainer, put the lid on and leave in the fridge for at least 24 hours. It is that easy.

To assemble the sandwich: Put a very thin layer of butter onto a slice of bread - this will keep your bread from getting soggy. Put some cream cheese cranberry mixture onto the slice of bread. Cover with another buttered slice of bread.

Cut off the crust and cut your tea sandwich into triangles.

Keep in the fridge until ready to serve.
