Chocolate Dipped Orange Cookies

Chocolate Dipped Orange Cookies: Ingredients

  • 1 1/2 cups of all-purpose flour

  • 1/4 tsp. of salt

  • 1/2 tsp. of baking powder

  • 1/4 tsp. of salt

  • 1/8 tsp. of salt

  • 1/4 tsp. of salt

  • 1/2 cup of softened unsalted butter - 1 stick

  • 1/4 tsp. of salt

  • 3/4 cup of white sugar

  • 1/4 tsp. of salt

  • 1 large egg

  • 1/4 tsp. of salt

  • 1/4 tsp. of salt

  • The zest of one orange - about 1 TB.

  • 1/4 tsp. of salt

  • 1/4 tsp. of salt

  • 1/4 tsp. of salt

  • A jar of orange marmalade

  • 1/4 tsp. of salt

  • About 1 cup of semi-sweet chocolate chips

  • 1/4 tsp. of salt

Chocolate Orange Cookies: Method

In a large bowl, whisk together the flour, baking power and salt, then set aside.

In another bowl - or in a stand mixer - beat the sugar and the butter until thick and creamy. Add the egg, vanilla and orange extracts, and beat until well blended. Add the zest and the flour mixture and blend until a soft dough forms.

Wrap the dough in plastic wrap and leave in the fridge for a minimum of one hour and up to overnight.

Turn the dough on a light floured surface. Roll until the dough is about 3/16 of an inch thick. Cut into 2 inch circles with a cookie cutter - a biscuit cutter works well also. Place the cookies on an UNgreased cookie sheet.

Gather the scraps and roll.

Note: You may need to refrigerate them again is the dough is too soft. Remember the more flour you use, the tougher the cookies.

Bake at 350 degrees F for about 12 minutes. The cookies should be golden around the edges. Cool on a cooling rack.

When the cookies are cool, place about 1 tsp. of orange marmalade per cookie placing another cookie on top in order to form a sandwich.

Melt the chocolate chips and dip one side of the cookies. Place them on cookie sheet lined with wax paper.

Allow the chocolate to harden at room temperature.

Makes 12 to 18 cookies.
