You will love these chicken salad tea sandwiches. They are very simple to make and they are so full of flavor.

You could make them with any bread...personally, I love these sandwiches on fresh mini croissants - regular croissants work well too, they just make a bigger tea sandwich than normal.

If you make the chicken salad the day before you plan your tea party, this works very well for the day of the party all you need to do is assemble them. It will save you on time and stress. Served on a pretty platter they are beautiful.

Pecan Cranberry Chicken Salad

Romaine lettuce leaves - washed and dried

Mini croissants - or the bread of your choice

Chicken Tea Sandwiches: Method

Make the chicken salad a few hours before the party or - even better - the day before.

Just before your guests arrive: Cut the croissants in half but not all the way through. Open one up and place a lettuce leaf inside - you may omit this step - and some of the chicken salad. Close the croissant and place on a serving platter.

If you choose to use sliced bread: You may consider putting a thin layer of butter on the bread. Then place some lettuce and the chicken salad. Cut the crust off the bread and cut it diagonally twice. Place the sandwiches on a serving platter.
