Recipe for Cherry Tassies





These cherry tassies are just bite size yumminess, they are perfect for tea parties or cookie exchange parties.

What are tassies?

Tassies - pronounsed tas-eez - are the contents of a cup or goblet. In short, it means these cookies are made in a cup...in rhis case a muffin cup. So they are indeed bite size.

These cherry almond tassies are delicious and beautiful since they are each topped with a maraschino cherry.

What is a maraschino cherry?

It is a cherry preserved in a syrup flavored with real or imitation maraschino. As for maraschino - pronounced mare-uh-SKEE-noh - it is a sweet liqueur distilled from the fermented juice of a bitter wild cherry. Most maraschino cherries you will find in the grocery store in the United Stattes, do not contain true maraschino but rather an imitation maraschino.

Cherry Almond Tassies: Ingredients

  • 1 1/4 cups of softened butter - 2 1/2 sticks

  • 1 1/2 cups of powdered sugar

  • 1 tsp. of baking powder

  • 1/2 tsp. of salt

  • 1 large egg

  • 2 1/4 cups of unbleached all-purpose flour

  • Maraschino cherries with the stem - 36 cherries

  • Extra powdered sugar

In a large mixing bowl, cream the butter and powdered sugar until it is well blended.

Add the vanilla, rum and almond extract.

In another bowl, mix the flour, salt and baking powder together. Add this flour mixture to the the butter mixture and blend.

Add the almond meal and mix again.

Place about 1 cup of powdered sugar in a Ziplock bag, shape your dough into 1 inch balls and place them a few at a time in the powdered sugar until they are well coated. Then press each tassie into 1 3/4 inch UNgreased muffin cups or into mini muffin paper cups placed in the muffin pan.

Place a cherry - stem side up - onto each tassie.

Bake at 350 degrees F, for 10 to 12 minutes or until your cherry tassies are slightly brown. Sprinkle with coarse sugar if you choose to.

Let the tassies cool about 5 minutes in the muffin cups before trying to unmold them.
