Cherry Almond Tassies: MethodIn a large mixing bowl, cream the butter and powdered sugar until it is well blended. ![]() ![]() Add the vanilla, rum and almond extracts. In another bowl, mix the flour, salt and baking powder together. Add this flour mixture to the butter mixture and blend. Add the almond meal and mix again. ![]() Place about 1 cup of powdered sugar in a Ziploc bag, shape your dough into 1 inch balls and place them a few at a time in the
powdered sugar until they are well coated. Then press each tassie into 1 3/4 inch UNgreased muffin cups ![]() Place a cherry - stem side up - onto each tassie. Bake at 350 degrees F, for 10 to 12 minutes or until your cherry tassies are slightly brown. Sprinkle with coarse sugar if you choose to.
