If you love cheesecake then you will love this cheesecake bites recipe.

Those bite size cheesecakes are perfect for any tea party. They are easy to make and this recipe for cheesecake bites makes a lot... about 108 to be exact!

The batter for the cheesecake is from an Italian cheesecake recipe and it is delicious. As for the toppings, I will give some simple ideas and some recipes as well.

Recipe for Cheesecake Bites: Ingredients


  • 1 package of cream cheese - softened - 8 oz

  • 3/4 cup of sugar

  • 2 eggs - beaten

  • 1 teaspoon of lemon juice

  • 1 teaspoon of vanilla extract

  • 1 1/2 tablespoons of cornstarch

  • 1 1/2 tablespoons of flour

  • 1/4 cup of butter - softened

  • 1/2 cup of sour cream

  • 1 1/3 cups of graham cracker crumbs

  • 1/4 cup of butter - melted

To make the crust, in a small bowl, place the graham cracker crumbs with the 1/4 cup of melted butter and mix until well moistened.

Note: If you do not choose to use mini muffin cups, you will need to grease your mini muffin pan.

Place mini muffin liner into your muffin cup, and place 1 teaspoon of the graham cracker mixture in each cup. Take your second muffin pan and place it on top of the other and press down...this is the best way to quickly pack down the crust. Repeat this process with the second mini muffin pan.

To make the filling, mix together the cream cheese, ricotta cheese, softened butter, eggs, sour cream and the sugar. Add the flour, cornstarch, lemon juice and the vanilla extract.

Place 1 tablespoon of the cream cheese mixture in each mini muffin cup.

Preheat your oven to 350 degrees. Place the mini muffin tray into the oven and turn the temperature down to 325 and bake for 14 to 20 minutes.

The cheesecake bite on the left was made with a muffin liner and the one on the right was not.



Wait until totally cooled before serving. Cheesecake bites are best made the day before you need them.

Makes 108 cheesecake bites.

You may eat them plain or with various topping:

  • Jam or jelly - strawberry, raspberry or grape

  • Chocolate syrup

  • Caramel topping

  • A piece of fruit: half a strawberry, one raspberry, a kiwi slice...

  • Blueberry topping - recipe below

  • Strawberry or raspberry topping - recipe below

  • Whipping cream

  • A chocolate ganache

  • Chopped nuts






Cheesecake Bites Recipe: Blueberry Topping


  • 1 cup of blueberries

  • 2 tablespoons of sugar

  • 2 teaspoons of cornstarch

  • 1 teaspoon of water

  • 2 teaspoons of lemon juice

In a small saucepan, place all the ingredients and cook on medium heat until this mixture thickens. Cool before placing 3 blueberries on top of each cheesecake bites.







Cheesecake Bites Recipe: Raspberry or Strawberry Topping


  • 1 cup of strawberries or raspberries

  • 1 1/2 tablespoons of powdered sugar

  • 1 teaspoon of lemon juice

Use 1/4 to 1/3 of a cup of the berries and mash them. Add the sugar and lemon juice and let sit.

Place a half a strawberry - or one whole raspberry - on top of each cheesecake bites and add a small amount of the pureed fruit.
