This is a delicious recipe for chai scones.

What is chai?

In many parts of the world the word "chai" stands for tea. Chai is pronounced like pie but with a "ch" sound first. The chai used for this recipe is the chai from India which is a spiced black tea served with milk.

Indian chai produces a warming, soothing effect on the body as well as acts as a natural digestive aid.

Chai Scone Recipe: Ingredients


  • 2 1/2 cups all-purpose flour

  • 1 tablespoon baking powder

  • 1 teaspoon baking soda

  • 1/4 teaspoon salt

  • 3/4 cup black tea

  • 1/2 cup powdered milk

  • 6 tablespoons cold butter cut into tiny pieces

  • 1/2 cup sugar

  • 1 egg - beaten

  • 1/2 teaspoon ground ginger

  • 1/2 teaspoon ground cinnamon

  • 1/4 teaspoon ground cardamom

  • 1/4 teaspoon ground cloves






Chai Scone Recipe: Method

In a medium size bowl, place the flour, baking soda, salt and baking powder. Add the pieces of butter. I like to use my fingers for this step but a pastry blender will work as well. Between your fingers rub the flour mixture and the butter together until it resembles coarse sand.

Add the spices and the powdered milk and combine well. Add the beaten eggs and the black tea. Mix well with a fork until the mixture forms a sticky dough.

Turn the dough onto a lightly floured surface. Gently knead the dough until it holds together. Roll it out until it is 1 inch thick. With a cookie cutter cut circles into the dough.

Place each scone unto a greased cookie sheet about 1 inch apart. Bake at 375 degrees for 12 to 18 minutes or until golden brown.

While warm, place the icing on top. See recipe below.

Glaze


  • 1 cup powdered sugar
  • 2 to 3 tablespoons milk
  • 1/2 teaspoon rum or vanilla extract - optional



  • Mix all the ingredients together with a whisk. Pour over the warm scones.
