Banana Scone Recipe
with Ginger Rum Glaze





This banana scone recipe was served at our impromptu "Pirate Tea Party/Scavenger Hunt" and it was a hit! I wanted a tropical flavored scone so I thought about using my pina colada scone recipe. However, I also wanted to try a brand new scone recipe. I must say these banana scones with a ginger rum glaze turned out wonderful and fit the bill perfectly!

Our tea party involved kids, teens and adults and all of them loved these banana scones. The banana flavor was not overwhelming and it blended perfectly with the ginger rum glaze.

Banana Scone Recipe





Banana Scones: Ingredients


  • 2 cups all-purpose flour

  • 1/4 cup brown sugar

  • 2 teaspoons baking powder

  • 1/4 teaspoon salt

  • 6 tablespoons cold butter - cut into chunks

  • 3/4 cup milk

  • 1/2 teaspoon vanilla extract

  • 1 banana cut into small pieces

  • Optional: 1/2 cup of macadamia nuts - chopped






Banana Scones: Method

Sift the flour, baking powder, sugar, and salt together into a medium size bowl. Add the cold butter chunks and blend together with the tip of your fingers until it resembles coarse salt.

Make a well, add the milk and vanilla and combine well. Knead a couple times.

Add the banana - and nuts - and very gently mix with your hands. Be careful to not squeeze the banana chunks. It will be normal for your dough to be on the sticky side.

At this point, form some balls about half the size of tennis balls. Pat them flat and place them on a greased cookie sheet - or a cookie sheet covered with parchment paper.

Bake at 400 degrees F. for 17 to 20 minutes or your banana scones are a nice golden color.

Makes about 12.

Ginger Rum Glaze for Banana Scones


  • 1 cup powdered sugar

  • 2 tablespoons milk

  • 1 teaspoon rum extract

  • 1/4 teaspoon ground ginger



Mix all the ingredients in a small bowl. Place about one tablespoon of glaze onto each banana scone.
